Can you believe its already time for a new school year ?!


After an extra long (covid) summer full of Zoom calls, FaceTiming with your grand parents and binging Netflix, the first day back to school is finally here!


Our dream is that this year all students think of school as a happy place where they come together to do work that truly matters.


Ask your kids to share what they’re learning and to ask hard and interesting questions. Tell them to have fun and to make the best new stories so that they could tell you all about them when they come home! Remind them that today more than ever, every day is a blessing.

Let’s kick off the first day of school with these simple yet delicious, brain booster pancakes (recipe below the article)! These are high in protein, fiber and omega 3s - the perfect start to your kid’s day!

OUR GO-TO PANCAKE RECIPE


Ingredients

  • 1 1/4 cup unsweetened almond milk

  • 1 3/4 cup dry oats

  • 1/4 cup grounded flaxseed

  • 1 medium banana

  • 1 tablespoon honey

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon (not a must if you don’t like the taste)

  • 1/4 teaspoon sea salt (or regular salt if you can’t find any)

  • 1 1/2 teaspoon baking powder

  • 2 large eggs

  • 1 tablespoon coconut oil

  • 1 cup blueberries or raspberries (OR BOTH 🤪)

Instructions

  • Place all ingredients (except eggs, coconut oil and berries) into a quality blender and blend until oats are grounded and everything is mixed well.

  • Add the eggs and mix until incorporated.

  • Heat a griddle over medium heat and melt a teaspoon or two of coconut oil or butter. Pour about 1/4 cup of the batter for each pancake.

  • Drop 3-4 berries onto each pancake before flipping. Wait until they’re brown on both sides (about 2-3 minutes per side) and serve hot with more blueberries and maple syrup.

  • PS: If the batter is too thick to pour, add a tablespoon or two of almond milk to thin.
